Instructions
1. Preheat your oven to 250-325ยฐF (121-163ยฐC).
2. Grease muffin tins or small loaf pans to prevent sticking.
3. Gather and chop dried fruits such as raisins, cherries, apricots, dates, and pineapple.
4. If desired, soak the dried fruits in brandy or rum for added flavor.
5. Chop nuts like walnuts or pecans into small pieces.
6. In a mixing bowl, combine flour, baking powder, and spices like cinnamon, nutmeg, and allspice.
7. In a separate bowl, cream together butter and sugar until light and fluffy.
8. Beat in eggs one at a time, mixing well after each addition.
9. Gradually add the dry ingredients to the wet ingredients, stirring until combined.
10. Fold in the soaked dried fruits and chopped nuts.
11. If using mincemeat, mix it in for added moisture and flavor.
12. Spoon the batter into the prepared muffin tins or small loaf pans, filling each about 3/4 full.
13. Smooth the tops and decorate with additional nuts if desired.
14. Bake in the preheated oven for 15-30 minutes, or until a toothpick inserted in the center comes out clean.
15. Remove from the oven and allow the cakes to cool in the pans for a few minutes.
16. Transfer the cakes to a wire rack to cool completely.
17. Optionally, brush the cakes with additional brandy or rum for extra flavor.
18. If desired, wrap the cakes in plastic wrap and let them age for a few days to enhance their flavor.
