Ingredients

– 13 chocolate sandwich cookies, finely crushed

– 2 tablespoons melted butter

– 2 tablespoons cold water

– 1 1/2 teaspoons gelatin powder

– 1 1/2 cups heavy cream

– 2 (8 oz) packages cream cheese, softened

– Green and yellow food coloring (optional)

– 1 teaspoon mint extract

– 1/2 teaspoon peppermint extract

– 1 1/2 cups powdered sugar, divided

– 1 (3.5 oz) bar semi-sweet chocolate, finely chopped (or more to taste)

– Mint leaves and finely chopped chocolate for garnish (optional)

Instructions

1-First, mix the crushed chocolate sandwich cookies with melted butter and press them evenly into eight small dessert cups to form the crust.

2-Next, sprinkle the gelatin powder over cold water and let it rest for 5 to 10 minutes to soften.

3-Now, whip the heavy cream until soft peaks form, then add 1/4 cup powdered sugar and whip until stiff peaks form; set this aside.

4-Beat the softened cream cheese until it’s smooth and fluffy, about 2 minutes, then mix in the remaining 1 1/4 cups powdered sugar.

5-Stir in the mint extract, peppermint extract, and food coloring if you’re using it.

6-Microwave the gelatin mixture for 30 seconds, whisk it for 1 minute until dissolved, and let it cool for 3 minutes.

7-Quickly blend the cooled gelatin into the cream cheese mixture.

8-Fold in the whipped cream and chopped chocolate until everything combines nicely, then pipe or spoon the mousse over the crust and chill for 3 hours.

9-Before serving, you can pipe sweetened whipped cream on top and garnish with mint leaves and chopped chocolate for extra flair.

Notes

🌱 Combine mint and peppermint extracts as listed, or use peppermint alone for desired flavor.
