Ingredients
1/2 cup granulated sugar
1/3 cup butter
1/2 cup chopped walnuts
3 ripe mashed bananas
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 cups all-purpose flour
1 large egg
1 tsp vanilla extract
Instructions
1-Preheat oven: Preheat your oven to 375°F (190°C).
2-Prepare the pan: Grease a baking dish with butter or cooking spray to prevent sticking.
3-Cook the vegetables: In a large skillet, heat oil over medium heat. Add chopped onions, bell peppers, and garlic. Sauté until soft and fragrant, about 5-7 minutes.
4-Mix the filling: In a large bowl, combine sautéed vegetables, cooked rice, black beans, corn, diced tomatoes, and your choice of seasonings.
5-Stuff the peppers: Cut the tops off bell peppers and remove seeds. Fill each pepper with the vegetable and rice mixture.
6-Bake the peppers: Place stuffed peppers upright in the prepared baking dish. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes, or until peppers are tender.
7-Serve: Remove from oven and let cool slightly before serving. Optionally, garnish with fresh cilantro or shredded cheese.
Notes
