Ingredients

– 2 1/2 cups plus 1 tablespoon (364 g) all-purpose flour

– 3/4 teaspoon baking soda

– 3/4 teaspoon salt

– 1/2 cup freeze-dried strawberries (8 grams before pulverizing)

– 1 cup (2 sticks | 227 g) unsalted butter, room temperature

– 1 3/4 cup (350 g) granulated sugar

– 1 large egg plus 1 large yolk

– 2 teaspoons pure vanilla extract

– 2 or 3 drops red food coloring (optional)

– 2 tablespoons cocoa powder

– Sprinkles or granulated sugar for rolling

Instructions

1-Adjust oven rack to middle position and preheat oven to 350Β°F (180Β°C). Line three baking sheets with parchment paper.

2-In a medium bowl, whisk together flour, baking soda, and salt.

3-Pulverize freeze-dried strawberries into powder using a food processor.

4-In a stand mixer with paddle attachment, beat butter on medium speed until creamy, about 1 minute.

5-Add sugar and beat until light and fluffy, 2 to 3 minutes.

6-Add egg, yolk, and vanilla extract, and beat until combined.

7-Add the flour mixture and mix on low speed until just combined.

8-Divide dough into three equal portions.

9-To one portion, add powdered strawberries and optional red food coloring; mix until combined.

10-To another portion, add cocoa powder; mix until combined.

11-Leave the last portion plain.

12-Pinch off about 15 grams of each flavor and gently press them together to form a multicolored ball.

13-Roll cookie dough balls in sprinkles or granulated sugar if desired.

14-Place 6 to 7 cookies per baking sheet.

15-Bake one sheet at a time, rotating halfway through, for 10 to 11 minutes until edges are set and cookies are puffed.

16-Cool cookies on baking sheet for 5 to 10 minutes before transferring to a wire rack to cool completely.
