Instructions
1-First, line a 9×9-inch baking pan with parchment paper to keep things neat. For the chocolate layer, beat 4 ounces of softened cream cheese until it’s fluffy, then gradually mix in 1 1/2 cups of confectioners’ sugar. Once that’s smooth, stir in 8 ounces of melted and cooled milk chocolate, spread it evenly in the pan, and pop it in the fridge for 10 minutes. I always laugh when I rush this part trust me, that chill time is key!
2-Next, tackle the raspberry layer: Beat another 4 ounces of softened cream cheese until fluffy, add 1 1/2 cups of confectioners’ sugar slowly, then blend in 8 ounces of melted and cooled white baking chocolate and 1 tablespoon of raspberry extract. If you want that pop of color, toss in 2 drops of red gel food coloring. Spread this over the chocolate layer and refrigerate for another 10 minutes. It’s like building a tasty tower!
3-Then, for the vanilla layer, beat 4 ounces of softened cream cheese until fluffy, add 1 1/2 cups of confectioners’ sugar, and mix in 8 ounces of melted and cooled white baking chocolate. Spread it over the raspberry layer, give it a quick chill, then cover the whole thing and let it set for at least 2 hours or overnight if you’re patient like me. Finally, lift it out, cut into 1-inch squares, and store in the fridge. Total active time is about 1 hour, plus chilling, and it’s worth every minute.
