Ingredients
– 1 cup butter
– Β½ cup brown sugar
– 1 teaspoon vanilla extract
– 3 cups quick-cooking oats
– 1 cup semi-sweet chocolate chips
– 2/3 cup peanut butter
Instructions
1-Melt butter and brown sugar together in a microwave-safe bowl for about 2 minutes, stirring until itβs caramel-colored and the sugar dissolves.
2-Stir in vanilla extract and oats, then microwave for an additional 2-3 minutes to help the oats absorb the liquid.
3-Press half of the oat mixture firmly into the bottom of the prepared pan.
4-In a separate bowl, melt chocolate chips and peanut butter together in the microwave on half power for 2-3 minutes, stirring every 30-60 seconds to avoid scorching.
5-Reserve ΒΌ cup of the melted chocolate-peanut butter mixture in a zip-top bag for drizzling.
6-Pour the remaining chocolate-peanut butter mixture over the oat base and spread it evenly.
7-Crumble or press the remaining oat mixture evenly over the chocolate layer, pressing gently with a spatula.
8-Snip a small corner from the zip-top bag and drizzle the reserved chocolate mixture over the top.
9-Refrigerate for 2-3 hours until firm, then slice into 16 bars and serve.
Notes
π§ Use no-stir peanut butter to prevent oil separation; natural peanut butter may separate.
π° Almond, cashew, or sunflower butter can substitute peanut butter for allergies.
