Ingredients

– 1/2 cup pumpkin seeds or nuts of choice

– 1/2 cup almond flour

– 1/3 cup cocoa powder

– 1/2 cup low carb sweetener

– 1/2 teaspoon stevia

– 8 tablespoons unsalted butter (softened)

– 1/8 teaspoon salt

– 1 cup heavy whipping cream

– 1 teaspoon vanilla extract

– 1 teaspoon liquid stevia

– 16 ounces softened cream cheese

– 1/2 cup sugar-free maple syrup

– 1/4 cup brown sugar substitute

– 1/2 teaspoon salt

– 1.5 cups chopped pecans

Instructions

1-Make the crust: Blend 1/2 cup pumpkin seeds or nuts, 1/2 cup almond flour, 1/3 cup cocoa powder, 1/2 cup low carb sweetener (or 1/2 tsp stevia), 8 tbsp softened unsalted butter, and 1/8 tsp salt in a food processor until crumbly. Press evenly into the greased pan. Chill while prepping filling.

2-Whip the cream: Beat 1 cup heavy whipping cream with 1 tsp vanilla extract and 1 tsp liquid stevia until stiff peaks form. Set aside.

3-Mix cream cheese base: In another bowl, combine 16 oz softened cream cheese, 1/2 cup sugar-free maple syrup, 1/4 cup brown sugar substitute, and 1/2 tsp salt until creamy and smooth.

4-Fold together: Gently fold whipped cream into cream cheese mixture. Stir in 1 cup chopped pecans.

5-Assemble: Spread filling over crust. Top with remaining 1/2 cup chopped pecans. Cover and refrigerate 6 to 8 hours or overnight.

6-Serve: Add optional whipped cream rosettes using a canister and star tip for extra flair.
