Ingredients
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 pound turkey sausages (hot or sweet), casings removed
– 1 (24 oz) jar marinara sauce
– 1 (14.5 oz) can canned tomatoes
– 3/4 cup low sodium chicken broth
– 1/2 cup water
– 1 (20 oz) package refrigerated three cheese tortellini
– 4 cups packed fresh spinach, roughly chopped
– 3 tablespoons fresh parsley, chopped
– 3 tablespoons fresh basil, chopped
– Pepper to taste
Instructions
1-First, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. This gets things started with that aromatic base, just like in the directions provided. Then, add 2 cloves of minced garlic and sautรฉ for about 30 seconds until it’s fragrant don’t let it burn!
2-Next, add 1 pound of turkey sausage, breaking it up as it cooks until it’s fully done, which takes around 6-8 minutes. Stir in 1 (24 oz) jar of marinara sauce, 1 (14.5 oz) can of canned tomatoes, 3/4 cup low sodium chicken broth, and 1/2 cup water; bring it to a light boil. This is where the magic happens, blending all those flavors together.
3-Add the 1 (20 oz) package of refrigerated three cheese tortellini, toss it in, and press it down into the sauce. Reduce the heat to medium-low, cover, and simmer for about 10 minutes, stirring once halfway through until the tortellini is cooked. Finally, stir in 4 cups of roughly chopped fresh spinach and 3 tablespoons of chopped fresh parsley; season with pepper to taste and toss gently to wilt the spinach, then mix in 3 tablespoons of chopped fresh basil before serving warm.

๐ If substituting pasta shapes other than tortellini, cook the pasta al dente separately before adding to prevent overcooking.
