Ingredients
1 tablespoon olive oil
1 pound smoked kielbasa or turkey/chicken sausage, sliced 1/4 inch thick
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10-ounce) can diced tomatoes
8 ounces dry small pasta
1/2 cup milk or heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese
1/3 cup thinly sliced scallions for garnish

Instructions
1-Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the sliced kielbasa and diced onions, cooking until they’re nicely browned this takes about 5 minutes and builds that flavorful base.
2-Stir in the minced garlic and cook for just 30 seconds until it’s fragrant, being careful not to let it burn.
3-Pour in 2 cups of low-sodium chicken broth, 1 can of diced tomatoes, 8 ounces of dry small pasta, 1/2 cup of milk or heavy cream, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Bring it all to a simmer and let it cook for 15 minutes until the pasta is tender.
4-Once done, remove from heat and mix in half of the 1 cup shredded Cheddar cheese. Top with the rest of the cheese, cover the pan, and let it sit until the cheese melts and everything gets bubbly.
5-Finish by garnishing with 1/3 cup thinly sliced scallions and serve it up hot for 4 large portions.
