Ingredients
3 small oranges or 2 large oranges (about 600 g total)
6 large eggs
200 g sugar (1 cup)
250 g almond flour (2 1/3 cups, also known as almond meal or ground almonds)
1 thumb-sized knob of fresh ginger
1/4 cup candied ginger
1 teaspoon baking soda
Zest and juice of 1 lemon for the topping
60 g pearl sugar for the topping
Instructions
First Step: Preheat the oven to 180Β°C (360Β°F) and grease a 24-cm (10-inch) springform cake pan to prepare for baking.
Second Step: Wash the oranges thoroughly, then simmer them whole in water for 2 hours, adding water as needed to keep them covered. Once done, drain, cool, quarter, and puree them for a smooth base that infuses natural citrus flavor.
Third Step: Peel and chop the fresh ginger, then finely dice the candied ginger. In a large bowl, beat the 6 large eggs with a fork until well mixed, then add the orange puree, 200 g sugar, 250 g almond flour, 1 teaspoon baking soda, and the chopped fresh ginger; stir everything together thoroughly.
