🍊 Flourless Orange Ginger Cake bursts with zesty citrus flavor and the warm spiciness of fresh and candied ginger for a moist, naturally gluten-free treat.
🧁 This cake is easy to prepare ahead and offers a delightful balance of sweet and tangy, perfect for those seeking a flavorful, allergy-friendly dessert.

  • Total Time: 2 hours 55 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

3 small oranges or 2 large oranges (about 600 g total)

6 large eggs

200 g sugar (1 cup)

250 g almond flour (2 1/3 cups, also known as almond meal or ground almonds)

1 thumb-sized knob of fresh ginger

1/4 cup candied ginger

1 teaspoon baking soda

Zest and juice of 1 lemon for the topping

60 g pearl sugar for the topping

Instructions

First Step: Preheat the oven to 180Β°C (360Β°F) and grease a 24-cm (10-inch) springform cake pan to prepare for baking.

Second Step: Wash the oranges thoroughly, then simmer them whole in water for 2 hours, adding water as needed to keep them covered. Once done, drain, cool, quarter, and puree them for a smooth base that infuses natural citrus flavor.

Third Step: Peel and chop the fresh ginger, then finely dice the candied ginger. In a large bowl, beat the 6 large eggs with a fork until well mixed, then add the orange puree, 200 g sugar, 250 g almond flour, 1 teaspoon baking soda, and the chopped fresh ginger; stir everything together thoroughly.

Fourth Step: Gently fold in the 1/4 cup candied ginger pieces to distribute the bits evenly without overmixing. This step ensures the spicy elements shine through in every bite. For added inspiration, check out our silky lemon cream treat recipe for more citrus ideas.

Fifth Step: Pour the batter into the prepared pan and smooth the top. Bake for about 45 minutes or until golden and a tester inserted in the center comes out clean. Allow it to cool slightly in the pan before loosening the edges and removing the sides.

Sixth Step: In a separate bowl, mix the 60 g pearl sugar with the zest and juice of 1 lemon, then spread this topping over the cooled cake for a crunchy, zesty finish. Let the cake cool completely before serving; it’s even better if made a day ahead and refrigerated.

Notes

πŸ‹ Simmering whole oranges may create an unusual smell initially but does not affect flavor.
πŸ₯„ Using baking soda (not baking powder) improves texture.
πŸŽ‚ Pearl sugar topping adds pleasant crust and visual appeal while balancing fresh and candied ginger flavors.
