Ingredients
– 4 ounces softened cream cheese (full-fat recommended)
– 1/2 cup (1 stick) softened salted butter
– 1 teaspoon vanilla extract (optional)
– 3/4 cup granulated sugar
– 1 cup all-purpose flour
– 10 chopped chocolate sandwich cookies (regular or double stuffed)
Instructions
1-In a large mixing bowl, beat cream cheese, butter, sugar, and vanilla extract with an electric mixer until fully combined.
2-Add flour and mix just until combined.
3-Gently fold in chopped chocolate sandwich cookies.
4-Cover dough with plastic wrap and chill in the refrigerator for 30 minutes until firm.
5-Preheat oven to 350 degrees Fahrenheit.
6-Roll dough into small balls and arrange them on a parchment paper lined cookie sheet.
7-Press each dough ball down slightly to flatten because the cookies will not spread much during baking.
8-Bake for 12-15 minutes or until golden brown on the bottom.
9-Cool cookies on a rack for at least 5 minutes before serving.
