Ingredients
2 sticks (approximately 226 grams) softened butter (salted preferred)
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon pure vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
10 oz (about 283 grams) chocolate chips (mini chips recommended)
1 bag of sandwich cookies with cream filling (double or mega filled preferred)
Instructions
1-Preheat oven: to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
2-Cream the softened butter: with the light brown sugar and granulated sugar until well combined.
3-Add the eggs and vanilla extract: mix until combined.
4-In another bowl, whisk together the flour, salt, and baking soda.
5-Gradually add the dry mixture to the wet ingredients, then fold in the chocolate chips until just combined.
6-Using a cookie scoop (about 3 tablespoons), place one scoop of dough on a sandwich cookie, then cover it with another scoop of dough. Press and cup the edges with your hands to fully enclose the cookie.
7-Gently flatten the dough-covered cookie into a ball and place it on the prepared baking sheet.
8-Bake for 9 to 13 minutes or until the cookies are cooked to your preference.
9-Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
10-Serve as is or cut in half to display the cookie center.
