12 slices thick-sliced bread cubed (about 14 cups)

Instructions
1-First, prepare your bread cubes by leaving them out overnight or warming in a 300°F oven for about 10 minutes to dry them slightly this helps them soak up the egg mixture without getting mushy.
2-Next, in a large bowl, whisk together the 6 large eggs, 3 cups milk, ½ teaspoon dry mustard powder, ½ teaspoon salt, and ½ teaspoon black pepper until smooth and well combined.
3-Grease a 9×13-inch baking dish to prevent sticking, then start layering. Add half the 14 cups of bread cubes, followed by half the cooked bacon or ham, green onions, red bell pepper, and cheddar cheese. Repeat the layers to build that classic strata feel. Pour the egg mixture over everything, making sure all the bread is covered for even absorption.
4-Cover the dish and pop it in the fridge for at least 3 hours or overnight to let the flavors meld. In the morning, let it sit at room temperature while you preheat the oven to 350°F. Bake it covered with foil for 45 to 55 minutes until a knife inserted in the center comes out clean. If you’re making two pans, extend the baking time to 60-80 minutes. For a crispy top, broil it for about 3 minutes until it’s golden and bubbly.
