1 sheet puff pastry dough (1/2 lb)
1 egg, beaten well
2 large fresh peaches (about 1/2 lb) or equivalent amount of canned/drained peaches
2 tablespoons granulated sugar
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1/4 cup sliced almonds
1/2 cup powdered sugar for the vanilla glaze
1/2 teaspoon vanilla extract for the vanilla glaze
1 tablespoon milk (adjust to desired consistency) for the vanilla glaze
Instructions
1-First: preheat the oven to 400°F and thaw the puff pastry dough at room temperature for about 20 minutes until it’s easy to unfold. Once that’s done, cut the pastry into 9 equal squares and place them 1 inch apart on a parchment-lined baking sheet for even baking.
2-Next: beat the egg in a small bowl and set it aside for later. Slice the peaches into 1/3-inch thick pieces and mix them in a medium bowl with the granulated sugar, all-purpose flour, ground cinnamon, and 1/4 teaspoon vanilla extract gently fold everything together to coat the peaches evenly.
3-Assembling and Baking the Tartlets: Arrange 3 to 4 peach slices in the center of each pastry square, making sure to keep the juice away from the edges to avoid sogginess. Brush the edges with the beaten egg and sprinkle on the sliced almonds for that extra crunch.
4-Bake: the tartlets on the center rack for 17 to 19 minutes until they’re puffed and golden, remembering to turn the baking sheet halfway through. Let them cool on the pan for 10 minutes, then prepare the vanilla glaze by mixing powdered sugar, 1/2 teaspoon vanilla extract, and milk until smooth drizzle it over the warm tartlets for a sweet finish.

🍯 Use well-drained canned peaches when fresh peaches are out of season.
