Instructions

1. Preheat the oven to 200°C. Roast vegetables of your choice, such as tomatoes, courgette, and bell peppers, until caramelized.
2. In a large pot, melt vegan butter over medium heat. Sauté chopped shallots until softened.
3. Add minced garlic and pearl barley to the shallots. Toast the barley for a few minutes until fragrant.
4. Pour in white wine and simmer, allowing it to be absorbed by the barley.
5. Gradually add vegetable stock, one ladle at a time, stirring frequently until each addition is absorbed and the barley becomes creamy.
