4 tablespoons vegetable oil, divided

1 sweet yellow onion, halved and thinly sliced into 2-inch slices

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

to 3 pounds petite sirloin, thinly sliced

1½ teaspoons seasoned salt or other all-purpose seasoning, divided

1 teaspoon garlic pepper, divided

8 hoagie rolls

6 tablespoons softened butter

7 ounces sliced provolone cheese (7 one-ounce slices)

Instructions

1-Place beef in freezer for 20 to 30 minutes to make thin slicing easier.

2-Heat 2 tablespoons vegetable oil in a large, deep sauté pan over medium-low heat. Add onions and bell peppers, cooking until very tender without browning. Transfer veggies to a dish and set aside.

3-Trim excess fat from sirloin and slice as thin as possible across the grain. Chop into very small pieces around ¼-inch size.

4-Heat additional oil in the pan over medium-high heat. Add half the chopped steak, seasoning with ¾ teaspoon seasoned salt and ½ teaspoon garlic pepper. Cook until no pink remains, about 4 to 5 minutes. Transfer to the dish with veggies using a slotted spoon, leaving juices behind. Repeat with remaining steak and seasoning.

5-Preheat oven to 400 degrees F.

6-Split hoagie rolls without separating. Spread softened butter inside and place on baking sheet. Toast in oven for 3 to 5 minutes until lightly golden.

7-Drain juices from pan, return all steak and veggies to the skillet. Place provolone slices over the mixture, cover, and cook on medium heat until cheese melts, about 4 to 5 minutes. Stir and mix cheese evenly.

8-Use tongs to transfer the mixture to toasted hoagie rolls and serve.
