Instructions

1-First, begin by making the simple syrup: heat equal parts sugar and water in a saucepan until the sugar fully dissolves, then let it cool completely.

2-Next, in a blender, puree the 3 ripe peaches (peeled and cubed), 1 cup of fresh pineapple chunks, and 1 cup of water until smooth. For more texture, strain this mixture through a fine mesh sieve to remove any pulp. Then, combine the strained juice with the remaining 1 cup of water, the juice of 3 limes, and the 2 tablespoons of cooled simple syrup in a pitcher, and adjust the sweetness to your liking.

3-Once mixed, chill the drink in the refrigerator until it’s thoroughly cold about 15 to 20 minutes works great. Before serving, add the 1 cup of frozen peach slices as natural ice cubes, and if you want it even cooler, toss in some additional ice. For a finishing touch, serve over crushed ice and garnish with fresh mint and lime slices.
