๐ŸŒฟ Enjoy a vibrant and nutty pesto made with fresh basil and rich pistachios for a unique twist.
๐Ÿ This pistachio pesto adds deep flavor and texture to pasta, sandwiches, and more, making meals exciting and wholesome.

  • Total Time: 10 minutes
  • Yield: About 1 cup pesto 1x

Ingredients

Scale

3 cups lightly-packed fresh basil leaves

1/2 cup freshly grated Parmesan cheese

1/3 cup shelled pistachios

3 cloves garlic

1 teaspoon sea salt

1/2 teaspoon freshly cracked black pepper

1/2 cup extra-virgin olive oil

Instructions

1-First, gather all the ingredients: 3 cups lightly-packed fresh basil leaves, 1/2 cup freshly grated Parmesan cheese, 1/3 cup shelled pistachios, 3 cloves garlic, 1 teaspoon sea salt, 1/2 teaspoon freshly cracked black pepper, and 1/2 cup extra-virgin olive oil. Make sure the basil is washed and dried to keep the flavors bright.

2-Next, add the pistachios, basil leaves, and garlic to a food processor. Pulse a few times until theyโ€™re coarsely chopped, which helps release those wonderful nutty and herbal notes.

3-Then, toss in the Parmesan cheese, sea salt, and black pepper. Blend again to mix everything evenly, creating a base thatโ€™s full of flavor and texture.

4-With the processor running, slowly pour in the extra-virgin olive oil until the mixture smooths out to your liking. This step binds it all together and gives that classic pesto consistency.

5-Finally, taste your pesto and adjust if needed, maybe adding a bit more salt or a splash of something fresh. Serve it right away or store it for later use in salads or other dishes.

Notes

๐Ÿฅœ Toast pistachios lightly before processing to enhance the nutty flavor.
๐ŸŒฟ Use fresh and vibrant basil leaves for the best aroma and color.
๐Ÿ‹ Add a squeeze of lemon juice to brighten the flavor and help preserve the green color.
