Instructions
1-Preheat oven to 375°F (190°C).
2-In a large bowl, whisk together flour, cornmeal, baking powder, dried oregano, garlic powder, onion powder, and salt.
3-Add the chopped pepperoni, shredded cheese, and sliced olives (if using) to the dry ingredients. Toss to combine.
4-In a separate bowl, whisk the eggs, milk, and ½ cup pizza sauce until smooth.
5-Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until combined; do not overmix.
6-Divide the batter evenly among 12 greased muffin cups.
7-Swirl 1 to 2 teaspoons of additional pizza sauce onto the top of each muffin.
8-Sprinkle each muffin with extra shredded cheese and desired toppings (e.g., extra pepperoni slices, olives).
9-Bake for 20 to 25 minutes, or until the centers are set and the muffins are golden brown.
10-Cool the muffins in the pan for a few minutes before transferring to a wire rack. Serve warm or at room temperature.
