Warm and hearty homemade beef stew with tender chunks of beef, potatoes, and carrots simmered in a flavorful broth. Perfect for a cozy dinner.

  • Total Time: 1 hour 45 minutes
  • Yield: 6 servings

Ingredients

– 2 tablespoons brown sugar

– 1 tablespoon chili powder

– 2 teaspoons paprika

– 1 teaspoon garlic powder

– 1 teaspoon dried thyme

– ½ teaspoon onion powder

– 1 teaspoon salt

– ½ teaspoon black pepper

– 1/8 teaspoon chipotle chili powder

– 1/8 teaspoon cayenne pepper

Instructions

First Step: Gather and measure ingredients Precisely measure all spices and brown sugar to ensure balanced flavor. Use a small bowl to keep the ingredients together for easy mixing.

Second Step: Combine the rub Whisk or stir together brown sugar, chili powder, paprika, garlic powder, dried thyme (or sub herbs), onion powder, salt, black pepper, and optional chipotle or cayenne pepper until evenly blended and finely mixed.

Third Step: Prepare the pork Pat pork chops, tenderloin, shoulder, or ribs dry with paper towels to help the rub adhere better. This step improves searing and flavor absorption.

Fourth Step: Apply the rub generously Rub the spice mixture onto all sides and edges of the pork. Massage lightly with your fingers to distribute the rub evenly, then shake off any excess to prevent burning during cooking.

Fifth Step: Marinate for enhanced flavor Refrigerate the rubbed pork for at least 1 hour and up to 12 hours to deeply infuse the spices. While optional, longer marinating intensifies the flavor and tenderizes the meat.

Sixth Step: Cook the pork Sear pork chops (around 0.8 inch thick) in a hot skillet with olive oil over medium-high heat for about 2 minutes per side and 3 minutes on edges using tongs. Then finish cooking in a 200°C (390°F) oven for about 3 minutes or until internal temperature reaches 65°C (149°F). Adjust times for thinner cuts as needed.

Final Step: Rest and serve Let the pork rest on a rack for 3 minutes before serving to allow juices to redistribute. While resting, melt unsalted butter in the hot pan, stirring with leftover rub and pork juices to create a flavorful sauce. Serve drizzled over pork with sides like mashed potatoes, rice, or roasted vegetables.

Notes

To thicken the stew, you can mash some of the potatoes or simply let it continue to cook uncovered to reduce the liquid slightly. Serve with crusty bread.
