🎃 This Pumpkin Banana Bread blends spiced fall flavors with a moist, tender texture, making it a perfect seasonal treat.
🍌 Combining pumpkin and ripe bananas adds natural sweetness and moisture, creating a flavorful homemade bread anyone will enjoy.

  • Total Time: 1 hour 10 minutes
  • Yield: 1 loaf 1x

Ingredients

Scale

2 cups all-purpose flour

2 teaspoons pumpkin pie spice (or as a substitute: 1½ teaspoons cinnamon, ½ teaspoon ground ginger, ¼ teaspoon nutmeg)

½ teaspoon cinnamon

1 teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

½ cup vegetable oil

½ cup sugar

½ cup brown sugar

2 large eggs at room temperature

2 teaspoons vanilla extract

2 medium ripe bananas, mashed

1 cup canned pumpkin puree (not pumpkin pie filling)

½ cup chopped walnuts (optional)

Instructions

1-First Steps: Preheat the oven to 350 degrees Fahrenheit and grease a 9×5-inch loaf pan or line it with parchment. Gather and measure ingredients: two cups flour, one teaspoon baking soda, half teaspoon baking powder, half teaspoon salt, spices, sugars, oil, eggs or substitutes, pumpkin puree, mashed bananas, milk, vanilla, and any mix-ins. Having everything ready speeds assembly and ensures even baking.

2-Mixing the Dry and Wet Ingredients: Mix dry ingredients in a large bowl by whisking together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined. Sifting is optional but helps create a lighter crumb.

3-Mixing the Dry and Wet Ingredients: In a separate bowl, combine wet ingredients: mash the bananas until smooth, then stir in the pumpkin puree, sugar, brown sugar, oil or melted butter, eggs (or flax ‘eggs’), milk, and vanilla until the mixture is homogenous.

4-Combining and Baking: Fold wet ingredients into dry ones gently until just combined a few streaks of flour are fine to avoid a dense loaf. Add mix-ins like nuts if desired, then pour into the pan and bake for fifty to sixty minutes, checking with a toothpick.

5-Combining and Baking: After baking, cool the loaf properly before slicing. For adaptations, use the substitutions mentioned earlier.

6-Extra Tips for Success: For a tighter crumb, beat sugars with eggs briefly before adding pumpkin.

7-Extra Tips for Success: If making muffins, adjust bake time to twenty to twenty-five minutes.

Notes

🥚 Use eggs at room temperature for better mixing.
🍌 Ripen bananas quickly by baking at 300°F for 30-40 minutes until soft.
🍞 Use a light-colored loaf pan and cover with foil if the top browns too fast.
