Instructions

1-First Step: Prep and preheat. Set your oven to 350°F. Prepare two 8×4-inch loaf pans by greasing them generously with softened butter and dusting with flour, or use a baking spray with flour. Line the bottom with parchment if you prefer easier removal, but always grease the sides.

2-Second Step: Dry ingredients. In a medium bowl whisk together the dry ingredients: 2 cups all-purpose flour, ½ teaspoon salt, 1 teaspoon baking soda, ½ teaspoon baking powder, 1 teaspoon ground cloves, 1 teaspoon ground cinnamon, and 1 teaspoon ground nutmeg. Whisking ensures even spice distribution and avoids pockets of baking soda or spices.

3-Third Step: Cream butter and sugar. In a large mixing bowl, beat 1½ sticks (¾ cup) unsalted butter (softened) with 2 cups sugar until light and fluffy, about 2 to 3 minutes with a hand mixer or stand mixer. Scrape down the bowl as needed. Lightly creamed butter traps air that helps the loaf rise and gives a tender crumb.

4-Fourth Step: Add eggs and pumpkin. Add 2 large eggs one at a time, beating briefly after each so they are incorporated. Then beat in the entire 15-oz can of 100% pure pumpkin until the mixture looks smooth. The batter may look slightly grainy at this point if the pumpkin was cold; that is normal and will smooth out once the dry ingredients are mixed in.

5-Fifth Step: Combine wet and dry. Fold the dry ingredients into the wet mixture in two additions, stirring gently until just combined. Avoid overmixing to keep the crumb tender. If you are using a gluten-free blend, mix until no streaks of flour remain but stop as soon as the batter is homogeneous.

6-Sixth Step: Bake. Divide the batter evenly between the two prepared loaf pans and smooth the tops. Bake in the preheated 350°F oven for 65 to 75 minutes. Begin checking at 60 minutes; the bread is done when a toothpick inserted in the center comes out clean or with a few moist crumbs. If the tops brown too fast, tent loosely with foil after 45 minutes.

7-Final Step: Cool and serve. Let the loaves cool in the pans for 10 to 15 minutes, then run a knife around the edges and invert onto a wire rack to cool completely.
