6 large carrots

Instructions
1-Preheat the oven to 400Β°F (205Β°C). Slice the 6 large carrots lengthwise in half and arrange them in a single layer on a baking sheet. This ensures even cooking and max caramelization.
2-Mix the glaze. In a small bowl, combine 1Β½ tablespoons melted olive oil with Β½ tablespoon pure maple syrup. Brush this evenly over the carrots.
3-Season. Sprinkle sea salt to taste and a pinch of cayenne pepper if you like a little heat. Tuck 5 sprigs fresh rosemary between the halves if using.
4-Roast. Place in the oven for 25 minutes, flipping halfway through, until tender. The high heat caramelizes the natural sweetness without parboiling.
5-Check doneness. Pierce the thickest piece with a fork; it should be soft but hold shape.
6-Serve. Remove, garnish with chopped parsley, and enjoy warm. For adaptations, swap oil for avocado or adjust syrup for less sugar.
