Ingredients
– 2 large bell peppers (red, yellow, or orange)
– 8 slices artisan bread (about 1/2-inch thick)

– 2 cloves garlic (cut in half)

Instructions
1-First, preheat your oven to 400°F (200°C) and place the bell peppers on a baking sheet. Roast them for 30-35 minutes until they’re softened and blistered, filling your home with an inviting aroma. This step is where the magic happens, as the heat brings out the peppers’ natural sweetness and smokiness.
2-Next, remove the peppers from the oven and let them steam in a covered bowl for 15-20 minutes to loosen the skins. Once cooled, peel off the skins, discard the seeds, and slice the peppers into strips. This makes them easy to mix with other flavors and ensures a smooth texture on your bread.
3-Then, in a medium bowl, combine the sliced peppers with 4 tablespoons of extra virgin olive oil, 1 tablespoon of balsamic vinegar or cider vinegar, 2 cloves of garlic cut in half, fresh basil as desired, and salt to taste. Stir gently to blend everything, creating a vibrant topping that’s full of zest.
4-Now, brush one side of each of the 8 slices of artisan bread with some of the extra virgin olive oil. Arrange the slices on a baking sheet, oiled side up, and bake for 5-7 minutes until they’re golden brown. For an extra garlic kick, rub the toasted bread with the cut side of a garlic clove.
5-Finally, spoon the roasted pepper mixture over the toasted bread and serve immediately. This step ensures the bruschetta stays crisp and flavorful, perfect for sharing. If you’re preparing for a crowd, remember to adjust quantities based on your needs, just like I do for family events.
