Instructions

1-Marinating the Chicken: In a large bowl, combine 3/4 cup Shaoxing wine, 1 tablespoon minced ginger, 3 minced garlic cloves, and 1 teaspoon kosher salt. Add 2 1/2 pounds chicken wings and toss to coat thoroughly. Let this marinate for at least 20 minutes or overnight in the refrigerator for deeper flavor. 2-Heating and Frying: Heat 2 to 3 cups of neutral-flavored, high-smoke-point oil in a large heavy skillet or wok to about 350°F. Coat each piece with 1 cup potato starch, shaking off any extras, then fry in batches to avoid crowding about 5 minutes per side until golden brown. Drain on paper towels to keep them crispy.
