Ingredients
– 3 lbs Gala apples (peeled, cored, cut into 1-inch pieces)
– 1 cup 100% unsweetened apple juice
– 2 teaspoons ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon ground cloves
– 1/2 teaspoon ground allspice
– 1 tablespoon unsalted butter
– 1 tablespoon packed brown sugar
– 1 tablespoon maple syrup
– 1/4 teaspoon salt
– 1 tablespoon heavy cream
Instructions
1-Blend one-third of the stewed apple mixture at a time until smooth using a food processor or immersion blender.
2-Return the blended apples to the slow cooker and cook on low for 6 to 8 hours, until the mixture reduces by about half.
3-For the caramel sauce, combine the maple syrup, butter, and brown sugar in a heavy skillet over medium-high heat. Whisk continuously until thick and bubbly.
4-Add the salt and heavy cream to the caramel mixture, whisk for another 1 to 2 minutes, then remove from heat.
5-Slowly stir the prepared caramel sauce into the cooked apple mixture and let it cool.
6-Scoop the cooled apple butter into 4-ounce lidded jars for storage.
