Ingredients

– 2 pounds large jumbo shrimp peeled and deveined tails on

– 1 pound smoked sausage such as kielbasa or andouille cut into 1-inch pieces

– 4 ears corn on the cob each cut into 4 pieces

– 1 pound small red potatoes cut in half

– 1 medium onion cut into large pieces

– 4 lemons 2 for cooking 2 for serving

– ½ cup unsalted butter

– 4 cloves garlic smashed

– ⅓ cup seafood seasoning

– ½ teaspoon salt

– ½ teaspoon black pepper

– 2 tablespoons fresh parsley chopped plus more for garnish

Instructions

1-First: fill a large pot with water and add 2 quartered lemons, onion pieces, smashed garlic cloves, seafood seasoning, salt, and black pepper. Bring it to a boil for that zesty base we all crave.

2-Next: toss in the halved potatoes and cook for 10-12 minutes until they’re just barely fork-tender don’t rush this part!

3-Then: add the corn pieces and smoked sausage pieces, letting them cook together with the potatoes for 5-6 minutes to soak up those flavors.

4-Finally: add the shrimp and cook for 2-3 minutes until they turn pink and plump. Once done, drain the mixture and spread it on a large baking sheet for serving.

5-Melt the unsalted butter in the microwave and stir in the 2 tablespoons chopped fresh parsley.

6-Pour half of the butter mixture over the boil and stir to coat, saving the rest for dipping.

7-Garnish with extra parsley, lemon wedges, and more seasoning if you like, then serve right away!
