Ingredients
1 pound uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
2 cloves garlic, minced
2 tablespoons taco seasoning (or use this substitute: 1 tablespoon chili powder, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dried oregano, 1/2 teaspoon paprika, 1/2 teaspoon ground cumin, 1/2 teaspoon salt, 1/2 teaspoon black pepper)
1–2 cups melting cheese (such as mozzarella, cheddar, Mexican blend, or Monterey Jack)
6–8 medium flour tortillas
Instructions
1-First, prepare all ingredients by chopping bell peppers, rinsing and patting dry shrimp, and grating cheeses. Preheat a skillet over medium heat to get that sizzle going! In a bowl, combine cooked shrimp, diced bell peppers, and chopped cilantro; season with salt and pepper to taste as per the directions.
2-Next, heat olive oil in a large skillet over medium heat. Add chopped onion, bell pepper, and garlic; cook for about 1 minute until tender, just like in the classic recipe! Then, add shrimp and taco seasoning to the pan, cooking for 1-2 minutes while stirring until the shrimp begin to turn pink. Transfer the shrimp mixture to a bowl, rinse and wipe the skillet clean, then return it to medium heat with a light coat of cooking spray or oil.
3-Now, place one tortilla in the skillet and sprinkle cheese over half of it. Spoon about 5-6 shrimp over the cheese layer, add another sprinkle of cheese, and fold the tortilla in half. Cook for 2-3 minutes per side until golden brown and crispy, repeating for the remaining tortillas! For the best results, serve hot with sides like sour cream, salsa, or guacamole to boost those flavors even more.
