– 1 to 2 cups melting cheese such as mozzarella, cheddar, Mexican blend, or Monterey Jack

– 6 to 8 medium flour tortillas

– Marinated tofu for vegans

– Corn tortillas for gluten-free

– Vegan cheese alternative

Instructions

1-First, heat the olive oil in a large skillet over medium heat. Sauté the chopped onion, bell pepper, and minced garlic for about 1 minute until they become tender and aromatic. This step builds a flavorful base that makes the whole dish pop. Once done, add the shrimp and taco seasoning, then cook for 1 to 2 minutes until the shrimp start turning pink.

2-After that, remove the mixture from the pan and give it a quick clean. Lightly oil or spray the pan to get it ready for assembly. Now, place a tortilla in the pan and sprinkle cheese on one side, followed by the shrimp mixture and more cheese on top. Fold the tortilla in half and cook each side for 2 to 3 minutes until it’s golden and crispy. Repeat with the remaining tortillas for a full batch.

3-Finish by serving with sides like sour cream, salsa, or guacamole. This whole process takes about 5 minutes for prep and 10 minutes for cooking, totaling around 15 minutes.
