Instructions

First Step: Prepare the steak: Remove your sirloin steak from the refrigerator about 30 minutes before cooking. Bringing it to room temperature ensures even cooking throughout. Pat the steak dry with paper towels to promote a good sear. Season generously with salt and freshly ground black pepper on both sides. Mince the garlic and gently prepare fresh rosemary sprigs.

Second Step: Heat the skillet: Preheat a cast iron skillet over medium-high heat until it is just about to smoke. Add 1 tablespoon of olive oil and swirl to coat the pan evenly. The hot skillet is essential to develop the steak’s perfect crust, sealing in juices and flavor.

Third Step: Sear the steak: Place the sirloin steak firmly in the hot skillet without moving it. Let it sear for 3 minutes to create a caramelized, flavorful crust. Flip the steak carefully and sear the other side for an additional 1 minute. This quick searing produces a delectable brown crust that complements the tender interior.

Fourth Step: Add aromatics and finish in the oven: Turn off the burner and immediately add 2 tablespoons of butter, minced garlic, and fresh rosemary sprigs on top of the steak. The residual heat melts the butter, infusing the meat with wonderful herbaceous and garlicky notes. Transfer the cast iron skillet to a preheated oven at 375°F (190°C). Bake the steak for 5 to 7 minutes depending on thickness and preferred doneness 135°F (57°C) for rare, 140-145°F (60-63°C) for medium. Use a meat thermometer for accuracy.

Fifth Step: Rest the steak: Remove the steak from the oven and transfer it to a cutting board. Let it rest for 10 minutes, covered loosely with foil. Resting allows juices to redistribute throughout the meat, making the steak tender and juicy once sliced.

Final Step: Serve and enjoy: Slice the sirloin steak against the grain for maximum tenderness. Serve plain or accompany with your choice of sauces and side dishes such as steamed broccoli or jasmine rice. Customize according to dietary preferences for example, pair with gluten-free gravy or low-calorie vegetable sides.

Notes

To prevent the eggs from scrambling, ensure the pan is not too hot when adding the egg mixture. Pecorino Romano can be used for a more traditional flavor.
