Ingredients
– 2 cloves garlic minced
– 1 yellow onion diced
– 2 ribs celery diced
– 2 carrots grated
– 1 lb (≈ 450 g) uncooked black beans rinsed and stones discarded
– 1 cup (≈ 240 ml) salsa
– 1 Tbsp chili powder mild red-chile blend
– ½ Tbsp ground cumin
– 1 tsp dried oregano
– 4 cups (≈ 960 ml) vegetable broth
– 2 cups (≈ 480 ml) water
– Salt to taste (add at the end)
Instructions
1-First Step: Mince the garlic, dice the onion and celery, and grate the carrots. Don’t forget to rinse the black beans and discard any stones to ensure everything’s fresh and ready.
2-Second Step: Add the garlic, onion, celery, carrots, black beans, salsa, chili powder, cumin, oregano, vegetable broth, and water into your 5-7 qt (≈ 5-6 L) slow cooker. Give it all a good stir to mix the flavors.
3-Third Step: Pop the lid on and cook on high for 6-8 hours, until the beans are super soft and everything melds together beautifully.
4-Fourth Step: Once it’s done, blend the soup to make it thick and creamy use an immersion blender right in the pot, or let it cool a bit and blend in batches with a countertop blender (remember to cover the lid to avoid messes). If you like some texture, leave a few beans whole.
5-Fifth Step: Taste it and add salt as needed for that perfect seasoning. Serve it hot with fun toppings like sour cream, tortilla strips, chopped green onions, cilantro, pepitas, shredded cheese, or even cooked rice to jazz it up.
