Ingredients
2 medium eggplants, diced into 1-inch cubes (about 2 pounds)
ยผ cup plus 2 tablespoons olive oil, divided
8 ounces pasta of choice (short, tubular pasta like rigatoni recommended)
2 cloves garlic, finely chopped or grated
1 teaspoon crushed red pepper flakes
2 cups tomato sauce (preferably a light, fresh-tasting marinara)
1 cup packed fresh basil leaves, thinly sliced
ยฝ cup finely grated parmesan cheese (or vegetarian/vegan alternatives)

Instructions
1. Preheat your oven to 450ยฐF and position the racks in the top and lower thirds. Line two baking sheets with parchment paper.
2. Spread the diced eggplant on the baking sheets. Drizzle with ยผ cup olive oil, season with salt and pepper, and toss to coat. Roast for 25-30 minutes, switching the pans and racks halfway through, until the eggplant is tender and browned.
3. In the meantime, bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
4. In a large skillet over medium heat, warm the remaining 2 tablespoons of olive oil, add garlic and crushed red pepper flakes, and cook until fragrant.
5. Pour in the tomato sauce, reduce the heat to low, and let it simmer gently.
6. Add the drained pasta, roasted eggplant, basil, and parmesan cheese to the skillet. Toss to combine, using the reserved pasta water to adjust the sauce consistency as needed.
7. Cook for an additional 1-2 minutes to let the flavors meld together, then remove from heat.
8. Serve with extra parmesan cheese and fresh herbs if desired.
