🌶️ Spicy Peanut Butter Noodles Simple 20 Minute Weeknight Recipe offers a fast, flavorful dish perfect for busy evenings with a delightful kick of heat.
🍜 This easy recipe blends creamy peanut sauce with spicy sriracha, providing a satisfying meal that can be customized with your favorite noodles and toppings.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

– 16 ounces noodles (any type or shape)

– 3 large cloves garlic (or 4-5 small cloves)

– 1 tablespoon fresh grated ginger

– 1 tablespoon oil (olive, coconut, avocado, or preferred)

– ⅔ cup low or no salt peanut butter (unsalted recommended)

– 4 tablespoons soy sauce (low sodium preferred)

– 1/3 to 1 cup hot water

– 1 tablespoon sriracha (adjust to taste)

– 1 tablespoon rice vinegar

– 1 to 2 tablespoons honey or maple syrup

– ½ teaspoon red pepper flakes (optional)

– 2 teaspoons sesame oil (optional)

Instructions

1-Getting started: Getting started with this recipe is as easy as boiling water, making it perfect for beginners or anyone in a rush. First, cook 16 ounces of noodles in boiling water following the package instructions until they’re just right tender but not mushy. Once done, drain them and set aside to keep that perfect texture.

2-Next: finely mince 3 large cloves of garlic (or 4-5 small ones) and sauté them in 1 tablespoon of your preferred oil over low heat for 2-3 minutes until they’re golden and fragrant. Then, add 1 tablespoon of fresh grated ginger and sauté for another minute to build that amazing aroma.

3-Remove the pan from the heat and whisk in ⅔ cup of low or no salt peanut butter, 4 tablespoons of soy sauce, 1 tablespoon of sriracha, 1 tablespoon of rice vinegar, 1 to 2 tablespoons of honey or maple syrup, ½ teaspoon of red pepper flakes if you want extra heat, and 2 teaspoons of sesame oil if using. Start with 1/3 cup of hot water and gradually add up to 1 cup more until the sauce is smooth and reaches your desired consistency.

4-Toss the cooked noodles with about half of this sauce, then add more as needed for full coverage. For a complete meal, serve it up with optional toppings like crushed peanuts, scallions, or cilantro it’s ready in just 15 minutes total! If you’re looking for more stir-fry inspiration, try our spicy Thai chicken stir-fry to mix things up.

5-Don’t forget to taste and adjust seasonings, like bumping up the sriracha for more spice or soy sauce for savoriness. This step-by-step approach ensures every bite is packed with flavor, and it’s versatile enough to add proteins or veggies as you like. With prep taking only 5 minutes and cooking just 10, you’ll have a delicious dish on the table before you know it.

Notes

🥜 Use unsalted peanut butter and low sodium soy sauce to control saltiness.
❄️ Noodles can be served hot or cold; add vegetables for a cold noodle salad.
🌱 Pairs well with steamed broccoli, grilled chicken, tofu, or sautéed vegetables.
