Ingredients
1 ½ lbs boneless, skinless chicken breast
2 tbsp cornstarch
Kosher salt
Vegetable oil
1 shallot, thinly sliced
2 red bell peppers, cored and thinly sliced
A 2-inch piece of lemongrass, bruised
1 red Fresco chile pepper, thinly sliced
6 garlic cloves, minced
1 tbsp minced fresh ginger
½ tsp red pepper flakes (plus more for topping)
½ cup creamy peanut butter
1 can (13.5 fl oz) coconut milk
¾ cup chicken stock
1 tbsp soy sauce
1 tbsp fish sauce
1 tbsp honey
1 lime, juiced (plus lime wedges for serving)
Rice, for serving
½ cup toasted peanuts, chopped
4 scallions, thinly sliced
A small handful of cilantro leaves
Instructions
1. Cut the chicken into 1-inch pieces and toss with cornstarch and salt.
2. Heat vegetable oil in a cast-iron skillet over medium-high heat. Brown the chicken for 2-3 minutes per side, then remove and set aside.
3. Lower heat to medium, add shallots and red bell peppers with oil and a pinch of salt, and sauté for about 8 minutes until browned and tender.
4. Add lemongrass, chile, garlic, ginger, and red pepper flakes, and cook for another minute.
5. Stir in peanut butter, coconut milk, and chicken stock, and bring to a simmer.
6. Return the chicken to the skillet, and simmer on low for 10 minutes until cooked through.
7. Stir in soy sauce, fish sauce, honey, and lime juice, simmer for an additional 2 minutes.
8. Taste and adjust seasoning as needed.
9. Serve over rice topped with toasted peanuts, scallions, cilantro, additional red pepper flakes, and lime wedges.
