1 jar (8 ounces) sun-dried tomatoes in olive oil, drained, with oil reserved
1 pound boneless, skinless chicken breasts or thighs
4 teaspoons Italian seasoning (dried basil, oregano, thyme, rosemary, sage)
1 teaspoon paprika
1 teaspoon cayenne pepper (optional for extra heat)
1 cup grated parmesan cheese
2 tablespoons butter
1 shallot, chopped
2 cloves garlic, minced
23 tablespoons Calabrian chili paste or harissa
1 pound pasta (rigatoni, penne, or linguine)
1 cup heavy cream or Greek yogurt
2 cups fresh spinach
1 cup cherry tomatoes, halved
Salt, black pepper, and red pepper flakes to taste
Olive oil (additional if needed)
Fresh basil for garnish

Instructions

Heat the oil reserved from sun-dried tomatoes in a large skillet over medium-high heat.
Season the chicken with Italian seasoning, paprika, cayenne pepper, salt, and black pepper.
Cook the chicken until golden brown and cooked through, about 5 minutes per side. Set aside.
In the same skillet, add butter and sauté shallots, garlic, and chili paste for about 3 minutes.
Add tomato paste and sauté for another 1-2 minutes.
Deglaze the pan with chicken stock, bringing the mixture to a simmer.
Add the cream, parmesan cheese, and red pepper flakes, stirring until the cheese melts and the sauce becomes creamy.
Cook pasta in a separate pot until al dente.
Add the pasta to the cream sauce along with the chopped sun-dried tomatoes, spinach, and cherry tomatoes. Toss well.
Return the chicken to the skillet, combining it with the pasta and sauce.
Simmer briefly until everything is warmed through.
Serve the dish topped with fresh basil and additional parmesan cheese.
