Ingredients

– 1 cup (120g) flour for the sponge

– 3/4 cup (170g) lukewarm water for the sponge

– 2 teaspoons yeast for the sponge

– 1/2 cup (71g) dried pineapple, chopped into 1/4-inch dice for the fruit mixture

– 1/2 cup (85g) golden raisins or dried cranberries for the fruit mixture

– 1/2 cup (85g) candied red cherries, snipped into quarters for the fruit mixture

– 2 tablespoons (28g) rum or brandy for the fruit mixture

– 2 1/2 cups (300g) flour for the dough

– 6 tablespoons (85g) softened butter for the dough

– 1/4 cup (28g) dry milk for the dough

– 1/3 cup (67g) granulated sugar for the dough

– 1 1/4 teaspoons (8g) table salt for the dough

– 1 teaspoon cinnamon for the dough

– 2 teaspoons cardamom for the dough

– 1 tablespoon (14g) orange zest or 1/8 teaspoon orange oil for the dough

– 1/2 cup (71g) toasted and chopped almonds for the dough

– 8 tablespoons (113g) melted butter for the topping

– 2 cups (227g) confectioners’ sugar for the topping

Instructions

1-To make Stollen Bites, start by preparing the sponge. Mix 1 cup flour, 3/4 cup lukewarm water, and 2 teaspoons yeast in a bowl; let it sit for 1 to 4 hours until it bubbles. This step builds flavor and texture, setting the foundation for a great bake.

2-Once ready, move on to the fruit mixture by combining 1/2 cup dried pineapple, 1/2 cup golden raisins or cranberries, 1/2 cup candied cherries, and 2 tablespoons rum; let it soak to absorb the flavors.

3-Next, blend the sponge with the dough ingredients: 2 1/2 cups flour, 6 tablespoons softened butter, 1/4 cup dry milk, 1/3 cup sugar, 1 1/4 teaspoons salt, 1 teaspoon cinnamon, 2 teaspoons cardamom, and 1 tablespoon orange zest. Knead until the dough is soft and elastic, then add the soaked fruit and 1/2 cup toasted almonds.

4-After kneading, cover the dough and let it rise for 1 1/2 to 2 hours. Then, divide it into 40 pieces, roll each into a ball, and place them on a greased baking sheet. Let them rise again for about 45 minutes until puffy. Bake at 350°F for 18 minutes until lightly browned. Cool for 10 minutes, then toss in 8 tablespoons melted butter and coat with 2 cups confectioners’ sugar.
