– 1 large egg

– ½ cup plus 2 tablespoons granulated sugar
– 1¾ cups all-purpose flour
– 1½ teaspoons baking powder
– 1 cup chopped fresh strawberries
Instructions
1-Preheat the oven: to 350°F (180°C) and line 1 or 2 cookie sheets with parchment paper.
2-In a large bowl, whisk together: the egg, lemon juice, oil, vanilla, and sugar until well combined.
3-Add the flour and baking powder: and mix until combined.
4-Gently fold in the chopped strawberries: just until incorporated, being careful not to overmix.
5-Form the dough into balls: roughly the size of a golf ball, and place them on the prepared cookie sheets.
6-Sprinkle the cookies lightly: with granulated sugar.
7-Bake: for about 15 minutes or until lightly golden, then let the cookies cool completely. Optionally, dust with powdered sugar or drizzle with melted chocolate before serving.
Notes
