Ingredients
12½ ounces (3/4 pound) strawberries
½ cup granulated sugar
1 cup cold cream (whole, heavy, or whipping cream with at least 30% fat content)
extra strawberries for topping
Instructions
1-Clean and slice the strawberries. This keeps things tidy and even.
2-Puree them with the sugar using a blender or food processor until smooth.
3-Set aside half a cup of the puree for layering.
4-Whip the cold cream until stiff peaks form. Take your time here for that airy magic.
5-Gently fold in the remaining strawberry puree into the whipped cream.
6-Divide the reserved half cup of puree evenly into 4 glasses.
7-Top each with the strawberry mousse mixture.
8-Refrigerate for about one hour or longer if desired.
9-Serve topped with fresh sliced strawberries.
Notes
🍧 To firm up mousse for fillings, dissolve gelatin in warmed milk before folding it in.
🍓 Use frozen strawberries without thawing or ensure well-drained thawed berries to avoid excess water.
🍯 Substitute sugar with monkfruit, honey (half the quantity), or maple syrup for alternative sweetness.
