Ingredients

– 2 1/2 cups homemade or store-bought strawberry sorbet

– 8 to 10 crushed cookies

– 1 tablespoon softened butter

– 4 tablespoons freeze-dried strawberry powder or strawberry sugar-free gelatin powder

Instructions

1-Line an 8Γ—8 inch square baking dish with parchment paper, leaving an overhang for easy removal.

2-Make crust: Pulse whole cookies in a food processor until fine crumbs. Mix with 3 tablespoons melted butter. Press firmly into the bottom of the baking dish. Freeze for 20 minutes to set.

3-Prepare topping: Crush cookies into large crumbs. Mix with 1 tablespoon softened butter, forming pea-sized pieces. Combine with 4 tablespoons strawberry powder or gelatin powder. Set aside.

4-Layer 1: Scoop about 2 cups of softened vanilla ice cream over the crust and spread evenly. Freeze for 10-20 minutes to harden slightly.

5-Layer 2: Add the 2 1/2 cups of strawberry sorbet evenly over the vanilla ice cream. Freeze for 10 minutes if needed for easier spreading of the next layer.

6-Layer 3: Add the remaining vanilla ice cream (about 2 1/2 to 3 cups) and spread evenly.

7-Top: Sprinkle the prepared strawberry cookie crumbs evenly over the top.

8-Freeze for 3-4 hours or overnight.

9-To serve: Lift bars out using the parchment overhang. Let sit for 5-10 minutes to soften the crust slightly. Cut into squares with a sharp knife.

10-Store bars in the freezer until ready to serve.
