🍪 Enjoy the perfect balance of chewy sugar cookies topped with fresh, vibrant fruit for a delightful treat.
🍓 This recipe combines a soft, chewy texture with a creamy frosting and colorful fresh fruit, making it both delicious and visually appealing.

  • Total Time: 25-27 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale

2 3/4 cups (390g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cream of tartar

1 1/2 cups (310g) granulated sugar

1 cup (226g) softened butter

1 teaspoon vanilla extract

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

Fresh fruit of various colors for serving

5 tablespoons (70g) softened butter

8 oz (226g) cream cheese, softened

2 cups (250g) powdered sugar

1/2 teaspoon vanilla extract

Instructions

1-First, preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper. This helps with easy cleanup and ensures your cookies don’t stick.

2-Next, in a large bowl, whisk together the dry ingredients like flour, baking soda, salt, and cream of tartar it’s the base that gives these Sugar Cookie Fruit Pizzas Chewy Version their signature texture.

3-Then, cream the sugar and softened butter in a mixer until it’s light and fluffy; this step is crucial for that chewy feel. Beat in the egg, egg yolk, and vanilla extracts next, blending until smooth. Gradually add the dry mix to the wet ingredients, stirring just until combined overmixing can make the cookies tough, which we don’t want!

4-Once your dough is ready, scoop it into 1 1/2 tablespoon balls and space them out on the sheets. Bake for 10-12 minutes until they’re slightly under-baked for maximum chewiness. Let them cool on the sheet before moving to a rack. For the frosting, cream the butter and cream cheese, then mix in powdered sugar and vanilla until fluffy. Finally, top the cooled cookies with frosting and fresh fruit it’s that easy!

Notes

🍴 Dough does not require refrigeration before baking.
🍓 Use a combination of diced strawberries, blueberries, and kiwi for the best fresh topping flavor.
🍪 Make sure cookies are completely cooled before frosting to avoid melted frosting.
