2 cans (15 oz each) black beans, drained and rinsed

1 medium sweet potato (350 grams), cut into 1/2-inch cubes

3/4 cup old-fashioned rolled oats

1/2 medium yellow onion, diced

1/2 medium red bell pepper, diced

4 cloves garlic, minced

2 teaspoons smoked paprika

1/2 teaspoon ground coriander

1/2 teaspoon fennel seeds

1/4 teaspoon ground cumin

1/2 of a vegan beef bouillon cube or 1/2 teaspoon vegetable base

1 tablespoon tamari

Kosher salt as needed

Oil spray

2 tablespoons avocado oil

Juice of 1 small lime

1 to 2 tablespoons agave syrup

Instructions

1-Prepare all ingredients by peeling and boiling the sweet potato until tender, then drain and mash it smoothly.

2-Rinse and drain the black beans thoroughly; mash half while leaving some whole for added texture.

3-In a large mixing bowl, combine the mashed sweet potato, mashed black beans, whole black beans, diced onion, diced red bell pepper, minced garlic, rolled oats, smoked paprika, ground coriander, fennel seeds, ground cumin, vegan beef bouillon or vegetable base, and tamari.

4-Add kosher salt as needed and mix everything until well combined. Gradually add more oats if the mixture is too wet to form patties.

5-Shape the mixture into evenly sized patties, about 1/2 inch thick, for consistent cooking.

6-Heat a non-stick skillet over medium heat and lightly coat it with oil spray.

7-Cook the patties for 4-5 minutes on each side until golden brown and heated through.

8-For the lime drench, whisk together the avocado oil, lime juice, and agave syrup in a small bowl, then drizzle over the cooked patties.

9-Serve immediately with your favorite sides, adjusting for dietary preferences as needed.
