🍠 Indulge in creamy and comforting sweet potato mac and cheese that’s both flavorful and nourishing.
🧀 This recipe blends the natural sweetness of sweet potatoes with rich cheese, perfect for comforting meals any day.

  • Total Time: 1 hour
  • Yield: 4 servings

Ingredients

– 3 tablespoons butter

– 3 tablespoons flour

– 2 cups milk

– 3 cups grated cheese

– 2 cooked sweet potatoes

– 6 cups pasta cooked al dente

– 1/2 cup panko bread crumbs

– 2 tablespoons chopped fresh sage or rosemary

– A pinch of cayenne pepper, chili powder, or red pepper flakes (optional)

– Salt and black pepper to taste

Instructions

1-Start by preheating your oven to 375°F to get everything ready for baking. Begin with melting the butter in a large saucepan and stirring in the sage or rosemary for aroma. Whisk in the flour until it turns golden brown, then slowly add the milk, stirring until the mixture thickens, which takes about 5 minutes.

2-Next, mix in most of the grated cheese and season with salt and pepper to taste. Puree the cooked sweet potatoes until smooth and combine them with the al dente pasta, ensuring it’s evenly coated. For added options, you can include garlic or onion powder for extra flavor at this stage.

3-Transfer the mixture to an 8×8 inch baking dish, top it with the panko bread crumbs and the remaining cheese, then bake for 10 minutes or until it’s golden and bubbly. If you want a crispier top, broil for an additional 5 minutes. This method, including cooking and baking, takes about 1 hour total, yielding 4 servings with mild sweet potato flavors perfect for picky eaters.

Notes

🧀 Use a variety of cheeses for richer flavor and texture.
🍠 Roast or microwave sweet potatoes for quicker preparation.
🌿 Add garlic or onion powder to the cheese sauce for extra depth of flavor.
