Sweet Potato Turkey Burger Sliders

Ingredients

– 1 pound (approximately 450 grams) lean ground turkey (thawed)

– 1/2 a white onion diced

– 1/4 cup (about 28 grams) mozzarella cheese

– 1 clove garlic minced

– 1/2 teaspoon Italian seasoning

– 1/8 teaspoon cayenne pepper

– 1/8 teaspoon dried basil

– 1/8 teaspoon garlic powder

– 1 large egg

– 2 tablespoons low sodium soy sauce

– 1 tablespoon Worcestershire sauce

– 3 medium sweet potatoes sliced into 1/2 inch thick rounds for the buns

– 3 tablespoons olive oil for roasting and cooking

– Tomato to taste

– Spinach to taste

– Ketchup to taste

– Mustard to taste

Instructions

1-Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Slice the 3 medium sweet potatoes into 1/2 inch thick rounds and toss them with 3 tablespoons of olive oil. Roast these slices for about 20-25 minutes until they’re tender and slightly golden they’ll serve as your buns.

2-While the sweet potatoes roast, mix the turkey ingredients in a large bowl. Combine the 1 pound of lean ground turkey, 1/2 diced white onion, 1/4 cup mozzarella cheese, 1 minced garlic clove, 1/2 teaspoon Italian seasoning, 1/8 teaspoon cayenne pepper, 1/8 teaspoon dried basil, 1/8 teaspoon garlic powder, 1 large egg, 2 tablespoons low sodium soy sauce, and 1 tablespoon Worcestershire sauce until everything blends well.

3-Shape the turkey mixture into small slider patties, about 2-3 inches wide, to make around 16 pieces. Cook these on a stove or grill over medium heat for 4-5 minutes per side until they reach an internal temperature of 165°F (74°C).

4-Once done, assemble your sliders with the roasted sweet potato rounds as buns and add optional garnishes like tomato, spinach, ketchup, or mustard.
