Ingredients

– 1 pound ground beef

– 1 ounce packet low-sodium taco seasoning

– 1/3 cup water

– 10.5 ounce can condensed cheddar cheese soup

– 2 cups shredded Mexican cheese blend divided use

– 1/2 cup sour cream

– 1/2 cup mild salsa

– 2 tablespoons parsley optional for garnish

Instructions

1-First, cook and crumble the 1 pound of ground beef in a skillet over medium heat until it’s thoroughly cooked, which takes about 7 minutes. Drain the excess grease, then add the 1 ounce packet of low-sodium taco seasoning and 1/3 cup water. Stir and simmer for 2 minutes to let the flavors meld.

2-Next, transfer the seasoned meat to a 5-6 quart slow cooker. Add the 32 ounce bag of frozen diced hash brown potatoes, 10.5 ounce can of condensed cheddar cheese soup, 1 cup of the shredded Mexican cheese blend, 1/2 cup sour cream, and 1/2 cup mild salsa. Mix everything until it’s well combined, then top with the remaining 1 cup of shredded cheese.

3-Cover the slow cooker and let it cook on high for 3 to 4 hours or on low for 4 to 6 hours, until the potatoes are tender. Once done, sprinkle 2 tablespoons of parsley on top if desired, and serve with optional toppings like diced tomatoes, sour cream, or sliced green onions.
