1 pound lean ground beef

1 onion, finely diced

1 green bell pepper, diced

1 package taco seasoning (about 1 ounce or 2 tablespoons), plus water as per package instructions

2 tablespoons salsa

20 egg roll wrappers (approximately 5″x5″)

2 cups shredded cheddar cheese, divided (Monterey jack or Tex Mex blend can also be used)

Instructions

1-First Step: Prepare all ingredients by chopping onions and bell peppers, and gather taco seasoning and cheese to streamline cooking. This sets you up for success right from the start.

2-Second Step: In a skillet over medium heat, cook the ground meat thoroughly, breaking it apart for even cooking. I find this part satisfying because the aroma fills the kitchen and gets everyone excited.

3-Third Step: Add taco seasoning to the meat, stirring well to coat and enhance flavors; cook for an additional 2 minutes, then mix in the diced onions, bell peppers, and salsa as directed.

4-Following the directions: Brown the ground beef and onions until no pink remains, then add green peppers, taco seasoning, salsa, and the amount of water required by the seasoning package; cook until the water evaporates.

5-Fourth Step: Continue by laying each egg roll wrapper flat with a corner pointing toward you, then place 1 ½ tablespoons of cheese and 1 ½ tablespoons of the taco filling in the center.

6-Fifth Step: Fold in the sides and roll the wrapper tightly; use a dab of water to secure the tip, making sure the sides are tucked in to prevent filling leakage.

7-Sixth Step: Preheat oil to 350°F and fry each egg roll for 4-5 minutes or until golden brown and crispy; serve hot with sour cream and salsa for that extra zing.

Notes

🌯 Use stretchy, doughy egg roll wrappers to prevent cracking.
🧻 Keep unused wrappers covered with a damp paper towel to prevent drying.
