🥔 Taco Potatoes Recipe Ideas bring the comforting heartiness of golden air-fried potatoes combined with bold, savory Mexican-inspired flavors.
🌮 This easy-to-make dish layers seasoned ground beef, melted cheese, and classic taco toppings for a flavorful and satisfying meal ready in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

– 2 pounds russet potatoes, peeled and small diced

– 3 to 4 tablespoons oil

– 1 ½ teaspoons salt

– ½ teaspoon pepper

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 pound ground beef (which can be swapped for ground turkey or ground chicken for variety)

– 1 packet taco seasoning

– Water (use the amount listed on the taco seasoning packet)

– 8-ounce bag Mexican shredded cheese (or cheddar or your preferred cheese)

– Optional toppings: pico de gallo, guacamole, sour cream

Instructions

1-First: coat the diced potatoes in 3 to 4 tablespoons of oil, then season with 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Mix everything well to get an even coating on the potatoes.

2-Cook the potatoes in an air fryer at 400°F for 18-20 minutes, shaking the basket 2-3 times to ensure they brown evenly.

3-Brown and crumble 1 pound of ground beef in a pan, then drain any excess grease to keep things light.

4-Add 1 packet of taco seasoning and the specified amount of water as per the packet instructions; cook it as directed and remove from heat once done.

5-To serve, layer the cooked potatoes with the seasoned ground beef, an 8-ounce bag of shredded Mexican cheese, and your choice of optional toppings like pico de gallo or guacamole.

Notes

🥔 Season potatoes with alternative spices like cajun seasoning, chili powder, paprika, or cumin for a different flavor profile.
🍠 Substitute red potatoes or sweet potatoes, or use baked potatoes topped with taco meat and toppings.
❄ Store leftovers without toppings in an airtight container in the fridge up to 3-4 days or freeze up to 3 months to maintain texture.
