Instructions
1-First: coat the diced potatoes in 3 to 4 tablespoons of oil, then season with 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Mix everything well to get an even coating on the potatoes.
2-Cook the potatoes in an air fryer at 400°F for 18-20 minutes, shaking the basket 2-3 times to ensure they brown evenly.
3-Brown and crumble 1 pound of ground beef in a pan, then drain any excess grease to keep things light.
4-Add 1 packet of taco seasoning and the specified amount of water as per the packet instructions; cook it as directed and remove from heat once done.
5-To serve, layer the cooked potatoes with the seasoned ground beef, an 8-ounce bag of shredded Mexican cheese, and your choice of optional toppings like pico de gallo or guacamole.
