Ingredients

– 1 pound ground chicken

– 2 finely minced green onions

– 1 large egg

– Zest of half a lime

– 1/2 cup panko breadcrumbs

– 1 tablespoon minced fresh cilantro

– 1 tablespoon grated lemongrass

– 1 tablespoon grated garlic

– 1 teaspoon grated ginger

– Kosher salt to taste

– 1/4 cup sweet chili sauce for basting

Instructions

1-First, preheat your oven to 350 degrees F and spray an 8×8-inch pan with nonstick spray to keep things from sticking. In a large bowl, combine 1 pound ground chicken, 2 finely minced green onions, 1 large egg, the zest of half a lime, 1/2 cup panko breadcrumbs, 1 tablespoon minced fresh cilantro, 1 tablespoon grated lemongrass, 1 tablespoon grated garlic, 1 teaspoon grated ginger, and kosher salt to taste; mix everything well until it’s evenly blended.

2-Next, shape the mixture into about 15 meatballs, using roughly 2 tablespoons of the mixture for each one, and place them in the prepared dish. Bake them for 10 minutes, then brush on 1/4 cup sweet chili sauce for basting and return to the oven for another 5 to 10 minutes until they’re fully cooked and the sauce gets sticky. Once done, let them cool a bit and serve with extra sweet chili sauce for dipping if you like.

Notes

🍽 Substitute ground turkey or pork for ground chicken as desired.
🌾 For gluten-free, use almond meal instead of panko and ensure chili sauce is gluten-free.
🍚 Serve smaller meatballs over rice, sautéed red cabbage, or cauliflower rice for a complete meal.
