Ingredients

– 1 pound ground chicken

– 2 green onions, finely minced

– 1 large egg

– 1/2 lime, zested

– 1/2 cup panko breadcrumbs

– 1 tablespoon minced fresh cilantro

– 1 tablespoon grated lemongrass

– 1 tablespoon grated ginger

– 1 tablespoon grated garlic

– 1 teaspoon kosher salt

– 1/4 cup sweet chili sauce

Instructions

1-First: preheat the oven to 350 degrees F and spray an 8Γ—8-inch baking dish with nonstick spray. In a large bowl, combine 1 pound ground chicken, 2 finely minced green onions, 1 large egg, zest from 1/2 lime, 1/2 cup panko breadcrumbs, 1 tablespoon minced fresh cilantro, 1 tablespoon grated lemongrass, 1 tablespoon grated ginger, 1 tablespoon grated garlic, and 1 teaspoon kosher salt.

2-Next: mix the ingredients together until fully combined, using your hands or a large spoon. Shape the mixture into balls, each about 2 tablespoons in size, and place them in the prepared baking dish.

3-Then: bake for 10 minutes. Remove from the oven and baste the tops of the meatballs with sweet chili sauce, using the 1/4 cup or more as needed.

4-After that: return to the oven and bake for an additional 5-10 minutes, until the meatballs are fully cooked and the sauce becomes sticky. Finally, serve with extra sweet chili sauce for dipping.
