2 cups short pasta (shells, macaroni, or varieties like brown rice or gluten-free pasta)

3 bay leaves

3/4 teaspoon salt

Pepper to taste

1/3 cup fresh parsley, dill, or green onions, finely chopped

Instructions

1-First, puree the onion, egg, salt, and pepper in a food processor or grate the onion and mix it manually with the ground turkey. This helps bind everything together for those tasty meatballs.

2-Next, form the mixture into golf ball-sized meatballs and brown them in oil in a medium-heated Dutch oven or skillet, frying each side for about 1 minute, then set them aside.

3-After that, add a bit more oil to the pot and sautΓ© the chopped carrots and celery for 3 minutes in the meat drippings to build flavor. Pour in the broth and bring it to a boil, then add the potatoes, meatballs, pasta, bay leaves, salt, and pepper. Once it boils, cover the pot, reduce the heat to low, and cook for 12 minutes.

4-Finally, turn off the heat and let the soup rest, covered, for 10 minutes so the flavors blend nicely. Stir in the fresh herbs and serve it hot. For a quicker option, you can skip browning the meatballs and drop them straight into the boiling broth, as mentioned in our tips.
