Ingredients

– 1 tablespoon olive oil

– 1 1/2 cups chopped onion

– 1 large sweet potato peeled and diced into small cubes

– 13 oz fully cooked turkey sausage cut into 1/2-inch thick slices

– 4 cloves garlic minced

– 6 cups chicken broth

– 1 teaspoon paprika

– 1 teaspoon cumin

– 3/4 teaspoon coriander

– 1/4 teaspoon chipotle chili powder

– Salt and pepper to taste

– 4 cups chopped fresh kale

– 1 (14.5 oz) can dark red kidney beans drained and rinsed

– 13 oz turkey sausage Provides savory flavor and protein

– 4 cups kale Adds nutrients and texture

– 3 cups sweet potato Adds nutrients and texture

– Various spices Enhances overall taste

Instructions

1-Heat olive oil and sauté onion for 5 minutes.

2-Add sweet potato and turkey sausage, cooking for 3 minutes.

3-Stir in garlic and cook for another 2-3 minutes.

4-Pour in chicken broth and spices, then simmer.

5-Add kale and kidney beans, and finish cooking.

Notes

⏲️ Prep all vegetables and sausage before cooking for a smooth process.
🌶️ Adjust chipotle chili powder to control the spice level according to your taste.
🥄 Stir occasionally while simmering to prevent sticking and ensure even cooking.
